Chicken Tenders



Chicken Tenders
These are sooooooooooooooooo good and my favorite. I serve with the BBQ sauce and a side salad with my "honey-Mustard" dressing. I usually don't dip them in the milk. I just crush the toast, add the spices and add the chicken and shake up in the bag. You can even prep a bunch ahead of time and "flash freeze." Don't wait to make this meal the whole family will enjoy!

    1. Pound melba toast until it is very powdery I use my rolling pin
    2. Add crushed toast to a Ziploc baggie, add in other seasonings. Experiment with this, I even have used a Cajun blend...just make sure it its approved for your specific diet plan
    3. Add strips to baggie and shake it up
    4. Bake at 350 for 20 minutes, turn over & bake another 20 minutes
    5. These are great with the BBQ sauce and a side salad!
    6. These can be frozen too, after you shake them up, lay out on a sheet separated and "flash freeze" and then add to a freezer bag. Baking times will vary if frozen. Just use a thermometer to make sure they are done.

    Asian Chicken Lettuce Wraps
    This is one of my favorites when I am trying to eat super lean. I like to have all of my Chicken diced in a large ziplock freezer bag with the "sauce" in a small freezer bag taped to the large one..This way, it's easy to freeze and have a "no thought needed supper.."

      1. Brown chicken, add veggies until tender (about 10 min)
      2. In a bowl mix braggs, garlic, ginger, cayenne, vinegar & stevia
      3. Add ¼ cup water to veggies in pan and once all the water is evaporated..Add the braggs mixture and kick the heat up to high. Stir until the sauce has reduced and chicken is “browned” I like mine well done!
      4. Serve with Lettuce Cups
